Frozen Cranberry Pineapple Salad

Quantity Measure Ingredient
1 cup fresh cranberries, ground in food processor
1/2 cup sugar
1 cup crushed pineapple, drained (8 oz. can)
4 cups miniature marshmallows
½ cup whipping cream, whipped into soft peaks

Directions

1. Combine cranberries, sugar and pineapple. Let stand 30 minutes until sugar dissolves. Stir marshmallows into cranberry mixture, fold in whipped cream.
2. Stir marshmallows into cranberry mixture, fold in whipped cream.
3. Spoon into small decorative bowl, cover and freeze at least 8 hours.
4. When ready to serve, let thaw for 20 minutes to soften the salad.
