Chocolate Pudding

Years ago when I was a student teacher, my first pie I ever made was a chocolate cream pie. It used this recipe for the filling. It was like a bite of heaven in a pie shell.

1 cup granulated sugar

1/3 cup flour

¼ teaspoon salt

2 ounces unsweetened chocolate (8 – ¼ oz. squares), finely chopped

2 cups milk

3 beaten egg yolks

2 Tablespoons butter

1 teaspoon vanilla

Combine sugar, flour and salt in a saucepan.   Gradually stir in milk and chopped, unsweetened chocolate. Stir continually for two minutes after mixture comes to a rolling boil. Stir a small amount of hot mixture into the egg yolks, stirring rapidly.  Return eggs to pan and continue to stir constantly. Remove pan from heat.  Add butter and vanilla.  Pour into pie shell.  Cool before serving.

Note: This pudding is also delicious in a baked pie shell for chocolate cream pie!
